Thanks to the simultaneous effect of sour-milk and yeast fermentation, kvass Ochakovskioffers enormous benefits for health. The compound barm based on pure culture yeast and sour-milk bacteria, which make part of kvass Ochakovski recipe, was recovered and prepared from stories told by long-term residents of Russian villages.
