Dressed herring, colloquially known as herring under a fur coat, is a Russian layered salad composed of diced pickled herring covered with layers of grated boiled vegetables (such as beets, carrots, potatoes), chopped onions, and mayonnaise. A final layer of grated boiled beetroot covered with mayonnaise is what gives the salad its characteristic rich purple color. It is known as "shuba" or "seledka pod shuboĭ".

When boiled and grated beets are layered on top of this salad, it looks similar to the texture of a fur coat, hence the name!
Dressed herring salad is popular in Russia, Ukraine, Belarus and other countries of the former USSR. It is one of the traditional dishes served as appetizer at New Year and Christmas celebrations in Belarus, Russia and Kazakhstan.
